I love bruschetta! (Actually, I love all Italian food.) In First Came Forever, Erica makes a bruschetta for dinner one night, which inspired one of the readers so much that she had to make her own bruschetta. In case you feel the same, I have Erica’s recipe here: Ingredients: 5 or 6 ripe plum tomatoes 2 cloves garlic 4 tablespoons extra-virgin olive oil 1 tablespoon balsamic vinegar 6-8 leaves (about ¼ cup) fresh basil leaves 1-2 teaspoons sea salt ½-1 teaspoon freshly ground black pepper 1 baguette or similar Italian bread Cut the tomatoes into small dices. Peel the garlic cloves. Mince one of them (save the other for later). Slice the fresh basil leaves thinly. Mix all ingredients together with olive oil, vinegar and sea salt in a bowl. Slice the bread diagonally into 1 cm slices. Take the saved garlic clove and use it to rub the bread slices. Drizzle with olive oil and put into the frying pan for a few minutes. When the slices are turning golden brown, put them on a serving platter. Place the tomato and garlic topping on each slice of bread and finished with some fresh basil leaves, sea salt and freshly ground black pepper. Bon appétit! Extract from First Came Forever: “Yes, well, luckily you don’t have any say,” Erica interrupted with a smile, then turned her focus to the frying pan. She put the diagonally sliced baguette, rubbed with garlic and drizzled with olive oil, into the frying pan for a few minutes. When the slices begun to turn golden brown, she put the bread on a serving platter, then placed the tomato and onion topping on each slice of bread and finished with some fresh basil leaves, sea salt and pepper. “There.” Taking a step back she rubbed her hands and looked at the plates.
